Miya Jia (she/her) is a fourth year CIR in Matsuyama from Chicago, USA. She is currently the Ehime AJET Secretary and has been a part of the team since 2023. Baked goods have always been a big part of her life, whether it be grabbing a treat on the way home from school or baking with friends at sleepovers, and while Japan has an amazing assortment of yummy desserts, she sometimes misses the ones from back home.

About the Recipe

   One of the first things I noticed when I moved to Japan was how rare ovens were here! In the U.S., large ovens are a standard in any home, even rented ones, and while I admit I hadn’t appreciated the ovens in my life more (they usually served as extra storage space for pots and pans instead…), as they say, you never know what you have until it’s gone. And as if cursed by some oven god, I suddenly had the urge to bake things, despite now owning only a microwave. It has an “oven” function, but we all know that button is a lie.

   I’ve tried to bake a number of things with said microwave, but none have been as successful as banana bread. It’s simple and not finicky – perfect for an inexperienced baker like me! Also, since I started owning rabbits, I’ve learned they go absolutely bonkers for bananas and always have some in stock, but because they can only be given as a small treat, we often neglect to finish them before they start turning brown. That’s where the banana bread comes in! It’s the perfect no-waste solution if you find yourself, for some reason, with an abundance of overripe bananas.

   As an inexperienced baker, the method I’m introducing is as barebones, whip-it-up-in-minutes as I could possibly make it, but if you prefer to do it your own way (say, using an electric mixer rather than a fork or separating wet and dry ingredients before combining), please do so! Banana bread is unfussy, so most changes to the recipe or method will not affect the outcome. The only thing I would be cautious of, however, is what you’ll be using to bake it! I use a 1000W microwave on the “oven” setting for this recipe, meaning I can preheat and set the temperature, but if you have a different cooking apparatus, you may want to keep a closer eye on your bread in case you need to adjust the baking time!

Banana Bread

Servings: 4~5 slices      Prep. Time: 10 mins

Cook Time: 40-50 minutes

Ingredients

  • 3 overripe bananas (the riper the better)
  • 200g granulated or brown sugar
  • 1 egg (ideally room temperature)
  • 34g melted butter, salted or unsalted (無塩)
  • 180g all-purpose flour (中力粉)
  • 1 tsp baking soda (重曹)
  • A pinch of salt
  • A few drops of vanilla extract (optional)

RECOMMENDED EQUIPMENT

  • Microwave with preheat option
  • Large mixing bowl
  • Fork or mixer
  • Kitchen scale
  • Square cake mold

Method

1.  Preheat your microwave to 180°C

2.  Mash the bananas in a large mixing bowl with a fork

3.  Add in the sugar, egg, and butter and mix until well blended

4.  Add in the flour, baking soda, salt, and vanilla extract (optional) and mix until well blended

5. Spread butter and sprinkle some flour to line the cake mold

6. Pour the batter into the cake mold and spread with a fork, making sure there is a slight dent in the middle to prevent it from baking unevenly

7. Bake for 40-50 minutes – check every 10 minutes in case your microwave bakes unevenly (like mine) and you need to rotate the pan

8. Poke the four corners and middle of the bread with a toothpick and if it comes out clean, it’s done!

9. Let the bread cool on a baking rack before serving or be a monster (like me) and just eat it straight from the pan

Tips 👌

✨ Use the Tare (zero) function on the kitchen scale to easily measure ingredients without needing to use separate bowls/measuring cups

✨ Bananas not ripe enough? Pop them in the microwave for a minute or two until the skin starts to blacken! Be careful when removing them because they will be HOT

✨ Bananas TOO ripe? Use less sugar to balance out the sweetness!

✨Use pancake flour (薄力粉) for a softer bread or bread flour (強力粉) for a heartier bread

✨ Add chocolate chips, blueberries, nuts or whatever you like for a fun twist
