He originally hails from Manzanilla, in rural Trinidad, which boasts the longest coastline in the country, various geographical places of interest, and lush greenery wherever you turn. About the Recipe

“Green Seasoning” is an all-purpose herb seasoning used as a base for many marinades in the Caribbean. You can use it to marinade meat, or to add to soups, stews, beans and curry. If you look up Caribbean recipes, 99.9% of them ask for this green goodness so if you’re prepping for a Caribbean feast, have your green seasoning AT👏THE👏READY👏!

Green Seasoning

Servings: ~300ml      Prep. Time: 15 mins

Ingredients

3 packs of cilantro

1 head of garlic

1 pack of shishitou peppers

1 pack of parsley

1 long green onion

1 bundle of chives

 

Optional: 

1 pack of ginger, cleaned

Chili peppers (to your taste)

1-2 tbsp white or rice vinegar

1 pack of thyme

Method

1. Clean and cut all aromatics into pieces manageable enough for your blender.

2. Blend ingredients with just enough water. Blend in batches if needed.

3. Store in an airtight jar in the refrigerator for up to a month.

Tips 👌

✨ Thyme is a tougher ingredient to find, but if you can find it, DEFINITELY add it to the seasoning!

✨ Christian’s favourite way to use green seasoning is as a meat marinade. Like in his Stew Chicken recipe!
