About the Recipe

This recipe is a Caribbean gathering classic! It’s especially popular at Christmas!

Macaroni Pie

Servings: 4      Prep. Time: 20 mins

Cook Time: ~45 mins

Ingredients

1 pk macaroni

2 tbsp butter

2 tbsp green seasoning

1 pk grated cheddar/mixed cheese

    *(reserve 1 cup for topping)

2 eggs

2 cups of milk

1 tbsp black pepper

Salt 

 

Optional

1 tbsp mustard (highly recommend)

2 tbsp ketchup (highly recommend)

1 green pepper, diced

1 carrot, grated

Method

1. Preheat your oven to 170°C/340°F.

2. In a large pot, bring some water to a boil and generously salt it. Add the macaroni once the water is at a rolling boil. Cook according to packaging instructions.

3. Grease baking tins with butter.

4. In a very small pan (like a tamagoyaki pan), melt the butter and add the green seasoning and cook just until fragrant.

5. Once the macaroni is boiled according to instructions, strain and add into a mixing bowl along with all ingredients and a pinch of salt, then mix to combine.

6. Transfer to the greased baking tins then sprinkle the reserved cheese on top.

7. Bake in the oven at 170°C/340°F for 25-30 minutes (start checking on it around the 25 minute mark).

8. Once it’s bubbly and golden brown, remove from the oven and allow to cool completely before cutting

Tips 👌

✨ If you like your food spicy 🌶️, add a chopped chili pepper or hot sauce of choice to your macaroni mixture! 

✨ Make this recipe vegan by swapping out the following ingredients:

💚 Butter 🠆 vegan butter or coconut oil

💚 Cheese 🠆 vegan cheese

💚 Milk 🠆 your favourite non-dairy milk

💚 Eggs 🠆 no eggs! Some variations of this recipe do not call for eggs, so it’s okay to go without! Note that the mixture might be a bit more loose, though! You could opt to make a roux, if you want!
