About the Recipe

This recipe is a Caribbean gathering classic! It’s especially popular at Christmas!

Macaroni Pie

Servings:ย 4ย  ย  ย ย Prep. Time: 20 mins

Cook Time:ย ๏ฝž45 mins

Ingredients

1 pk macaroni

2 tbsp butter

2 tbsp green seasoning

1 pk grated cheddar/mixed cheese

ย  ย  *(reserve 1 cup for topping)

2 eggs

2 cups of milk

1 tbsp black pepper

Saltย 

ย 

Optional

1 tbsp mustard (highly recommend)

2 tbsp ketchup (highly recommend)

1 green pepper, diced

1 carrot, grated

Method

1. Preheat your oven to 170ยฐC/340ยฐF.

2. In a large pot, bring some water to a boil and generously salt it. Add the macaroni once the water is at a rolling boil. Cook according to packaging instructions.

3. Grease baking tins with butter.

4. In a very small pan (like a tamagoyaki pan), melt the butter and add the green seasoning and cook just until fragrant.

5. Once the macaroni is boiled according to instructions, strain and add into a mixing bowl along with all ingredients and a pinch of salt, then mix to combine.

6. Transfer to the greased baking tins then sprinkle the reserved cheese on top.

7. Bake in the oven at 170ยฐC/340ยฐF for 25-30 minutes (start checking on it around the 25 minute mark).

8. Once it’s bubbly and golden brown, remove from the oven and allow to cool completely before cutting

Tips ๐Ÿ‘Œ

โœจ If you like your food spicy ๐ŸŒถ๏ธ, add a chopped chili pepper or hot sauce of choice to your macaroni mixture! 

โœจ Make this recipe vegan by swapping out the following ingredients:

๐Ÿ’š Butter ๐Ÿ † vegan butter or coconut oil

๐Ÿ’š Cheese ๐Ÿ † vegan cheese

๐Ÿ’š Milk ๐Ÿ † your favourite non-dairy milk

๐Ÿ’š Eggs ๐Ÿ † no eggs! Some variations of this recipe do not call for eggs, so it’s okay to go without! Note that the mixture might be a bit more loose, though! You could opt to make a roux, if you want!
