Christian Jalim is a fifth year ALT JET living in Matsuyama. He originally hails from Manzanilla, in rural Trinidad, which boasts the longest coastline in the country, various geographical places of interest, and lush greenery wherever you turn. He is super excited to be able to share his culture through food!
About the Recipe
A Trinidad “Chow” is a sweet, tangy & zingy dish with three main components: fruit, garlic & cilantro! Hit is with some citrusy acid to bring it alive and you’ll have a super delicious, super refreshing taste of the islands of Trinidad and Tobago, right in your kitchen.
Christian’s Chow features pineapple, an ingredient that’s available in grocery stores across Ehime, year-round (for a reasonable price, too). The acid component in this recipe comes from lime, which might be a bit tougher to find, but lemon can work well as a substitute (note that it is a bit more tangy, though).

Pineapple Chow
Servings: 2~3 Prep. Time: 15~20 mins
Ingredients
1 whole pineapple cut into cubes
2 cloves of garlic, grated or finely minced
~2 tbsp of finely chopped cilantro
Juice of half of a lime
A pinch of salt & black pepper
Method
1. Mix all the ingredients in a bowl. You can enjoy right away or chill in the fridge for about an hour.
Tips 👌
✨ If you like a strong cilantro flavour, feel free to add more!
✨ This recipe also works well with mikan or cucumbers.
